Make an easy salad with 2 of your five a day. This makes a perfect side to a summer feast and a lovely, quick lunch that you can make in advance. Serve tzatziki and flat breads to make for a more substantial meal.
Method
Based on 2 servings, adjust as needed.
Step 1
Heat half the oil in a large frying pan. Add the courgette and fry for 10 mins or until tender and golden on the outside. Set aside.
Step 2
Add the onion to the same pan. Fry gently for 10 mins or until softened. Add the chilli and coriander seeds and cook for 1 minute. Add the courgette and peas to the pan and warm everything through.
Step 3
Heat the remaining oil in a separate frying pan. Add the halloumi and fry on either side for 1-2 mins or until a deep golden brown. Cook the rice according to package instructions, combine it with the veg, lemon juice, zest and mint. Divide between plates, top with the halloumi, some extra mint leaves and a spoonful od tzatziki on the side, if you like.
