Some nights you want to cook like a pro, and some nights you just want dinner done before anyone asks for snacks again. This cheesy pork mince and tarragon gnocchi is a real winner: zero faff. It’s rich, comforting and tastes like you’ve made an effort (even if you were googling ‘what to do with pork mince’ ten minutes ago while hiding in the fridge).
Method
Based on 4 servings, adjust as needed.
Step 1
Spray a large frying pan with oil and place over a medium to high heat. Add the pork mince and cook for 5–6 minutes, breaking it up until golden and starting to crisp.
Step 2
Stir in the onion, garlic purée and tarragon. Cook for 2–3 minutes, until softened. Add the tomato purée and cook for a further minute.
Step 3
Tip in the gnocchi, then pour in the hot chicken stock and passata. Simmer for 3–4 minutes with a lid on until the gnocchi are soft and the sauce has thickened slightly.
Step 4
Stir through the Cheddar and Parmesan until melted and glossy. Season to taste and finish with chopped parsley, if you like.
