Use guacamole ingredients to make this flavourful vegan linguine, which can also be served cold as a pasta salad.
Method
Based on 4 servings, adjust as needed.
Step 1
Cook the pasta according to pack instructions – about 10 mins. Meanwhile, put the lime juice and zest in a medium bowl with the chopped and gently squashed avocado, chopped tomatoes, coriander, garlic, onion and chilli, if using, and mix well add in 2/3rd of the extra virgin olive oil and season with salt and pepper.
Step 2
Drain the pasta, toss in to the bowl and mix well. Serve straight away while still warm, or cold with the remaining olive oil.
