Creamy Porcini Spaghetti

This delicious and creamy mushroom spaghetti, is made using Sainsbury's Inspired to Cook porcini paste for that extra hit of richness and flavour. Method

Based on 4 servings, adjust as needed.

Step 1

Add the oil to a large saute pan and place over a medium heat. Add the diced onion and sweat in the oil for 5-10 minutes or until softened and slightly caramelised. In the meantime, cut the mushrooms into halves or quarters, set aside.

Step 2

Add the mushrooms and turn the heat up slightly so that they begin to caramelise and take on some colour. In the meantime, bring a large pan of water to the boil, followed by the spaghetti. Cook the spaghetti for roughly 6 minutes (and then add in the frozen peas to continue cooking with the pasta) until al dente. Reserve 150ml of pasta water before draining into a colander. ​

Step 3

Add the pasta water to the mushrooms and stir through the porcini paste. Cook for a further 2 minutes. Add the crème fraiche and stir to get a rich creamy sauce.

Step 4

Tip the cooked spaghetti into the pan and toss to coat the pasta evenly. Season to taste and serve into bowls.

  • 200g Garden Peas 1x Stamford Street Co. Peas 850g
  • 1 tbsp Vegetable Oil 1x Sainsbury's Vegetable Oil 1L
  • 90g Porcini Mushroom Paste 1x Sainsbury's Porcini Mushroom Paste, Inspired to Cook 90g
  • 125ml Lighter Crème Fraîche 1x Sainsbury's British Lighter Crème Fraîche 300ml
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
