Super-Nourish Shiitake Mushroom Stir-Fry with Kimchi

Spicy and gorgeously green, this quick stir-fry has a real zing and kimchi is an amazing source of probiotics to give your gut the love it deserves. Cashews add crunch and also contain antioxidants.

Method

Based on 2 servings, adjust as needed.

Step 1

Heat the Oil: Warm the vegetable oil in a wok over high heat.

Step 2

Stir-Fry Vegetables: Add garlic, onion, carrot, celery, shiitake mushrooms, and mangetout or green beans. Stir-fry for a couple of minutes, mixing well.

Step 3

Season: Sprinkle in sea salt and pepper.

Step 4

Add Noodles and Sauce: Incorporate the noodles and stir-fry sauce ingredients (light soy sauce, dark soy sauce and toasted sesame oil). Toss everything together over high heat for 3 minutes until nicely coated.

Step 5

Serve: Pile the noodles high on a large serving plate and serve immediately with the kimchi.

  • 2 Celery Stalks, peeled and sliced into thin 5cm batons 1 x Sainsbury's Celery
  • 0.5 tbsp Light Soy Sauce 1 x Sainsbury's Light Soy Sauce 150ml
  • 1 Red Onion, thickly sliced 1 x Sainsbury's Red Onions Loose
  • 55g Mangetout Or Green Beans 1 x Sainsbury's Trimmed Mange Tout 200g
  • 1 tbsp Dark Soy Sauce 1 x Sainsbury's Dark Soy Sauce 150ml
  • 1 tsp Toasted Sesame Oil 1 x Sainsbury's Sesame Oil, Toasted 250ml
  • 4 tbsp Kimchi 1 x Vadasz Raw Kimchi 400g
  • 1 Carrot, peeled and sliced into 5cm batons 1 x Sainsbury’s Carrots Loose
  • 1 tsp Garlic Paste, or 2 garlic cloves, finely chopped 1 x KTC Minced Garlic Paste 210g
  • 120g Fresh Shiitake Mushrooms, or 30g dried (soaked as per packet instructions) 1 x Sainsbury's Shiitake Mushrooms, Taste the Difference
  • 0.25 tsp Ground White Pepper 1 x Sainsbury's Ground White Pepper 44g
  • 400g Fresh Dan Dan Noodles, or fresh rice vermicelli for a vegan option 1 x Sainsbury's Free Range Fresh Egg Noodles 410g
  • 0.25 tsp to taste 1 x Maldon Sea Salt Flakes 250g
