A brilliant way to use up leftover roast chicken, or simply pick up a ready-roasted chicken for an easy midweek meal. Tossed with green lentils, tenderstem broccoli, salty anchovies, crumbled feta and a squeeze of fresh lemon, this is a deliciously hearty dish that's packed with fibre and protein. Quick to throw together, satisfying and full of flavour, it's perfect for a wholesome lunch or a light dinner.
Method
Based on 4 servings, adjust as needed.
Step 1
Cut the broccoli into bite-sized florets. Cook in a pan of boiling salted water for 2-3 minutes until just tender. Drain and refresh in cold water. Shred the roast chicken into bite-size pieces.
Step 2
Finely chop the garlic and the anchovy fillets together until you almost have a paste. Add the garlic and anchovy paste to a small jar or bowl, and add the Dijon mustard, lemon zest, juice, white wine vinegar, salt, pepper, and the olive oil. Mix or shake well until the dressing is combined.
Step 3
Drain and rinse the lentils. Mix the drained lentils in a large bowl with the shredded chicken, broccoli, crumbled feta cheese and chopped dill. Mix with the dressing, taste for seasoning, and add a generous squeeze of lemon juice. Serve the salad at room temperature, cold from the fridge, or heated as needed.
