Chicken mince might feel a bit strange to some people, but it’s a great source of lean protein, and it takes on strong flavours really well. This is a great option for a batch cook at the beginning of the week. As always, the nutritional breakdown includes optional rice and veggies.

Method

Based on 4 servings, adjust as needed.

Step 1

First, preheat the air fryer to 200°C for 3–5 minutes. While it is heating, prepare the chicken mince by adding the olive oil, chicken mince and garlic to the air fryer tray. Mix everything well so the garlic is evenly distributed.

Step 2

Cook the chicken mince in the air fryer for 3–4 minutes to allow it to start browning. Carefully remove the tray and let it cool for 2–3 minutes before stirring in the honey, sriracha and soy sauce. Return the tray to the air fryer and cook for 7–8 minutes, stirring or shaking halfway through, until the chicken is golden, cooked through, and starting to crisp up.

Step 3

Once the chicken is cooked, stir in the same oil and spring onions. Serve on its own, or with rice and vegetables, if you prefer.
