Turn up the volume on your weeknight routine with this vibrant harissa chicken traybake. It’s a riot of juicy chicken and charred veg, all tossed in a bold Al'Fez harissa paste that does all the hard work for you.
Method
Based on 4 servings, adjust as needed.
Step 1
Preheat the oven to 200°C (180°C for fan ovens)
Step 2
Prepare the ingredients by chopping the red onion, pepper, courgette, chorizo and halving the tomatoes. Slice the lemon.
Step 3
In a large baking tray coat the chicken and vegetables with the Al’Fez Harissa Paste. Nestle in the garlic and lemons between the chicken and vegetables.
Step 4
Drizzle the tray with honey and roast for 30-40 minutes. Once cooked, sprinkle with freshly chopped parsley leaves to finish and serve, with rice or cous cous if you like.
