Chipotle Chicken Traybake

Chipotle chillies are the king of smokiness and are highly used in many aspects of Mexican cookery. This quick and easy tray bake is packed full of sweet peppers, tomatoes, red onions and sweet potatoes and seasoned to perfection with Chipotle. Not too spicy, but a mild and delicate smoky heat that can be tuned up or down, depending on the audience at home. 👋 this recipe does benefit from an overnight marinade, but it's not essential.

Method

Based on 4 servings, adjust as needed.

Step 1

Preheat the oven to 205°C/195°C fan. Find a large tray that will hold all of the ingredients in 1 even layer, use 2 trays if necessary. Line the tray with greaseproof paper.

Step 2

Score the skin on the chicken thighs using a sharp knife and place them into the large tray(s) along with the peeled and cubed sweet potatoes, deseeded peppers cut into large chunks and the red onion peeled and cut into wedges and the halved plum tomatoes.

Step 3

Mix together the chipotle paste, ground cumin, smoked paprika the juice of half of the lime, a generous pinch of salt and a glug of olive oil. Pour this over the chicken and veg and mix well until coated. (You can now leave this to marinate if you wish or just get on with the cooking).

Step 4

Make sure the chicken is skin side up and the veg is all in an even layer before baking. Season with a little more salt on the chicken skin and bake for 40 minutes until everything is cooked through and caramelised. You may need to spin the tray or give everything a little stir halfway through cooking

Step 5

When nearly ready, heat the rice according to the packet instructions.

Step 6

Serve the chicken on the table, along with the rice and a wedge of lime on the side for extra seasoning.

  • 3 tbsp Chipotle Paste 1 x Very Lazy Chipotle Paste 115g
  • 325g Baby Plum Tomatoes, cut in half 1 x Sainsbury's Baby Plum Tomatoes 325g
  • 2 Sweet Potato, peeled and cubed 2 x Sainsbury's Sweet Potatoes Loose
  • 2 tsp Ground Cumin 1 x Sainsbury's Ground Cumin 43g
  • Maldon salt, to taste 1 x Maldon Sea Salt Flakes 250g
  • 2 Limes 2 x Sainsbury's Limes x1
  • 1 kg Skin on Chicken Thighs 1 x Sainsbury's 1kg British Fresh Chicken Skin on Thighs
  • 2 tsp Smoked Paprika 1 x Sainsbury's Smoked Paprika 44g
  • 2 Spicy Mexican Rice 2 x Ben's Original Spicy Mexican Microwave Rice 220g
  • 2 Red Onion, cut into wedges 2 x Sainsbury's Red Onions Loose
