Mladen, my sister-in-law’s father, makes the best cevapi, we’ve eaten our fair share over the years! These juicy, flavour-packed grilled kebabs are a fantastic alternative to meatballs, as they are quick, easy and perfect for stuffing into a baguette or pitta. You can also serve them with grilled veggies or a fresh salad on the side.
Method
Based on 4 servings, adjust as needed.
Step 1
In a large mixing bowl, combine all the ingredients except the olive oil, and stir until you get a sticky meat paste.
Step 2
Place a quarter of the meat mixture onto one half of a sheet of baking paper. Fold the paper over the meat, then use a bench scraper or the edge of a spatula to gently press the mixture into an even log. Cut this into thirds and repeat with the remaining mixture until you end up with 12 logs.
Step 3
Preheat your air fryer to 200°C, then place the cevapi into the air-fryer basket and cook for 10 minutes until crispy and charred on the edges.
Step 4
Stuff them into the ciabattas, dollop over some ajvar, onions and parsley, and serve.
