Vegan Fajitas with Smoky Black Beans and Peppers

Make a vegan version of fajitas with all the flavours of the classic Mexican dish. It makes a great sharing dish where everyone can help themselves.

Method

Based on 4 servings, adjust as needed.

Step 1

Heat the oil in a frying pan and fry the sliced peppers and onions over a medium high heat until tender and starting to turn golden brown, about 6-8 mins. Add the garlic and spices and fry for 1 min more until fragrant. Add half of the lime juice and season. Transfer to a serving dish and keep warm while you heat the beans.

Step 2

Tip the drained black beans into the same frying pan and add the remaining lime juice. Season well, and stir until warmed through and coated in any remaining spices from the pan. Stir in most of the coriander.

Step 3

Warm the tortillas in the microwave or wrapped in foil in a low oven, then cover with a tea towel to keep them warm. Serve the wraps with the peppers, beans, thecsliced avocado, dairy-free yoghurt, extra coriander and extra lime wedges to squeeze over, and the jalapeños if you like.

  • 2 Yellow Pepper, cut into strips 2 x Sainsbury's Yellow Pepper
  • small bunch of Coriander, finely chopped 1 x Sainsbury's Fresh Packed Bunch Coriander 30g
  • 3 Garlic Clove, crushed 1 x Sainsbury's Garlic
  • 4 tsp Pickled Jalapeños, to serve 1 x Sainsbury's Sliced Jalapenos, Inspired to Cook 200g (90g*)
  • 400g Can of Black Beans, rinsed and drained 1 x Dunn's River Black Beans 400g (240g*)
  • 1 tsp Ground Cumin 1 x Sainsbury's Ground Cumin 43g
  • 0.5 tsp Chilli Powder, or chilli flakes 1 x Sainsbury's Hot Chilli Powder 44g
  • 1 tsp Smoked Paprika 1 x Sainsbury's Smoked Paprika 44g
  • 8 tbsp Dairy Free Yogurt, to serve (optional) 1 x Alpro Plain Natural Soya Plant Based Yoghurt Alternative 500g
