Welsh Rarebit (Cheese on Toast) recipe by Cherrypick

Cheese on toast has NEVER tasted better.

Method

Based on 4 servings, adjust as needed.

Step 1

Preheat the grill to medium-high.

Step 2

Mix the grated cheese, beaten egg, Worcestershire sauce, mustard and ale in a mixing bowl.

Step 3

Toast the bread on both sides under the grill.

Step 4

Spread the cheese mixture on top of the toast, making sure to cover all corners, and return to your grill. Grill until the cheese has melted and is starting to turn golden.

Step 5

If you are serving your Welsh Rarebit with the optional salad, lightly dress the lambs lettuce with the lemon juice, olive oil and a sprinkling of salt. Serve immediately with your bubbling, cheesy toast and a dash more Worcestershire sauce for good measure.
