Method
Based on 4 servings, adjust as needed.
Step 1
Preheat oven to 180°C and oil a deep baking dish to serve 4-6.
Step 2
Cook the macaroni pasta in a large saucepan of boiling water until just cooked.
Step 3
Melt the butter in a large saucepan and add the diced onion, garlic and leek, stirring, until onion softens. Add the flour and cook, stiring well for about 2 minutes to cook out the flour. Gradually stir in milk (you might want to switch to a whisk at this stage). Cook until sauce boils and thickens, string as you go. Add the grated cheddar cheese and half of the grated parmesan cheese.
Step 4
Once cooked, drain the pasta and stir through the cheese sauce along with the drained tuna, sweetcorn and chopped parsley. Taste and season with salt and pepper as needed.
Step 5
Spoon mixture into dish; sprinkle with the breadcrumbs and the remaining parmesan cheese. Bake, uncovered, about 35 minutes or until browned lightly. Serve with a green salad, lightly dressed with a little balsamic, red wine vinegar or lemon juice.
