Tortilla quiche is a clever, crustless twist on a classic. Using a soft, seeded tortilla as the base, it’s filled with eggs, cheese and veg. Perfect for a lighter version of a classic and way less faff.
Method
Based on 4 servings, adjust as needed.
Step 1
Heat the oven to 200C/180C fan/gas 6. Wilt the spinach with a pinch of salt in a frying pan over a medium heat, then set aside.
Step 2
Whisk the eggs in a large bowl, then add the chopped vegetables, wilted spinach, a pinch each of salt and pepper and the chilli flakes. Mix well.
Step 3
Lay the tortilla onto a quiche tray, ensuring the edges come up the sides to form a crust. Pour in the egg mixture, sprinkle over the cheese and top with the cherry tomatoes. Bake for 20-25 mins until cooked through. Serve with a side salad, if you like.
