Overnight oats are a simple and filling way to start the day. A little prep the night before is well worth the effort for a delicious ready-to-go nutritious breakfast.
Method
Based on 2 servings, adjust as needed.
Step 1
Mix together oats, yoghurt, grated apple, cinnamon and 200ml water (if making 4) in a bowl or jar.
(Handy hint: you could swap the yoghurt for a dairy alternative such as unsweetened almond, cashew or coconut milk)
Step 2
Leave overnight in the fridge.
Step 3
In the morning, add a sprinkle of crushed walnuts (or other mixed nuts) and an optional additional sprinkle of cinnamon, to taste and some pomegranate seeds.
