Spiced Fried Rice with Sausage

You can whip up this quick and easy spicy rice with leftover sausages if you like, adding peppers and peas for pops of colour of fresh flavour – it's also gluten-free.

Method

Based on 4 servings, adjust as needed.

Step 1

Slice the sausages into 2cm rounds and put them to one side. Crack the eggs into a small bowl, add a pinch of salt and beat briefly using a fork.

Step 2

Heat the oil in a large wok over a medium-high heat and once hot, stir-fry the sliced sausages for 6-7 minutes until well browned all over. Now add the red pepper and carrots until lightly browned. Add the beaten egg, cook without stirring for 30 seconds, then break the egg up into chunks using a wooden spoon.

Step 3

Stir in the cooked rice, breaking it up as you do, then add the soy sauce, curry powder, turmeric and caster sugar, and stir again to coat the rice. Tip in the frozen peas and stir-fry for 5 mins more, or until the rice has crisped up in places. Serve the fried rice topped with the spring onion greens.

  • 1 Red Pepper, cut into 1cm cubes 1 x Sainsbury's Red Pepper
  • 6 Gluten Free Pork Sausages, cooked or raw, sliced 1 x Heck 97% Pork Gluten Free Sausages x6 400g
  • 100g Spring Onions, greens finely chopped (use the white parts in another recipe) 1 x Sainsbury's Spring Onions Bunch 100g
  • 2tbsp Garlic Infused Oil, or any oil 1 x Sainsbury's Garlic Flavoured Olive Oil, Inspired to Cook 250ml
  • 440g Cooked Long Grain Rice 2 x Ben's Original Classic Long Grain Microwave Rice 220g
  • 2 Carrots, cut into 1cm cubes 2 x Sainsbury’s Carrots Loose
  • 3 tbsp Gluten Free Soy Sauce or Tamari 1 x Yutaka Organic Tamari Soy Sauce, Gluten Free 150ml
  • 2 tbsp Mild Curry Powder, or medium for more heat 1 x Sainsbury's Mild Curry Powder, Inspired to Cook 79g
  • 100g Frozen Peas 1 x Sainsbury's Petits Pois 910g
  • 2tsp Caster Sugar 1 x Sainsbury's White Granulated Sugar 500g
