This comforting chilli is super easy to make thanks to our 5-Bean Medley. Serve with brown rice, jacket potato or quinoa for a deliciously nourishing meal.
Method
Based on 2 servings, adjust as needed.
Step 1
Heat a drizzle of olive oil in a medium pan. Once warm, add the onion, garlic and a pinch of salt and cook for 5-10 minutes until soft.
Step 2
Add the spices and tomato puree and cook for another 5 minutes, before adding the chopped tomatoes, sugar and 5-Bean Medley.
Step 3
Season well, bring to the boil then leave to simmer for 25-30 mins until thick.
Step 4
Sprinkle with fresh chilli, spring onion, coriander, pickled red onions and avocado if you'd like. Serve with cooked rice, quinoa or jacket potato.
