Get four of your five-a-day in this comforting cannellini bean and fennel ragu with 'Nduja, tomatoes and a herby gremolata topping. This is an easy and tasty meal that can be made in advance and reheated as needed.
Method
Based on 2 servings, adjust as needed.
Step 1
Heat the oil in a frying pan over medium heat and fry the onion, celery and fennel for 5 mins. Add the garlic (reserve about half a clove for later) and 'Ndjua, and fry for 5 mins more. Add the halved cherry tomatoes and the sunblushed tomato puree and cook for a further 3-4 minutes until the tomatoes begin to blister.
Step 2
Stir in the beans, along with their stock and the vinegar. Stir, bring to a simmer and cook, uncovered, for 10 mins. Season to taste.
Step 3
For the gremolata, mix the lemon zest, chopped parsley, chopped basil and about half a clove of grted garlic togeher with a pinch of salt. Set aside.
Step 4
Spoon the ragu into bowls and top with the gremolata. Scatter over some parmesan, if using, and serve with crusty bread, if you like.
