These chocolate almond butter protein slices are the perfect balance of indulgence and nourishment, making them an ideal snack for busy days or a post-workout energy boost. Packed with oats, protein, healthy fats and topped with a layer of rich dark chocolate, they're satisfying, naturally sweetened and easy to prepare ahead for the week.
Method
Based on 16 servings, adjust as needed.
Step 1
Line a square 20 cm (8 inch) baking tin with baking paper, leaving some paper overhanging at either end to make removing the slice easy. Lightly grease the areas of the tin on the sides not covered by the baking paper.
Step 2
Blend half the oats with the cocoa and protein powders to a flour consistency. Transfer to a medium-sized bowl and stir through the remaining oats and the puffed rice.
Step 3
Melt the coconut oil, almond butter and maple syrup in a small saucepan over low heat then pour over the dry ingredients. Stir gently to combine and, with clean wet hands, press the mixture into the prepared tin. Refrigerate for an hour.
Step 4
Meanwhile put the chocolate in a heatproof bowl and microwave for 30 seconds at a time, stirring after each time, until melted and smooth. Alternatively, use the double-boiler method: put the chocolate in a heatproof bowl over a saucepan with about 2 inches of simmering water (make sure the water doesn’t touch the base of the bowl). Melt the chocolate in the bowl, stirring occasionally until smooth.
Step 5
Spread the melted chocolate over the oat mixture, then sprinkle with desiccated coconut. Return to the fridge until set and slice into 16 pieces.
