Microwave Penne with Sausage and Peppers

One of my favourite easy meals is sausage and peppers, a simple, crowd-pleasing staple of Italian-American communities across the states, but particularly associated with Philadelphia. Add some pasta to this and you’ve got yourself a complete, delicious meal that cooks in the microwave in no time and in one dish.

Method

Based on 3 servings, adjust as needed.

Step 1

Combine the dried penne, oil, garlic, chilli flakes, oregano, and tomatoes with 250 mls water (if cooking for 2) in a large bowl and stir to mix. Add the drained olives, peppers and sausages on top.

Step 2

Cover and cook for 24 minutes, stirring every 8 minutes on full power (800w). Stir in the basil at the end of cooking, taste and adjust the seasoning with salt as you like (for me it usually doesn’t need any). Garnish with grated Parmesan, if you like.

  • 2 Red Bell Peppers, de-seeded and roughly chopped 2 x Sainsbury's Red Pepper
  • Maldon Salt, to taste 1 x Maldon Sea Salt Flakes 250g
  • 1 tbsp Olive Oil 1 x Sainsbury's Olive Oil 500ml
  • 400g Tinned Tomatoes, any kind 1 x Sainsbury's Chopped Tomatoes Can 400g
  • 1 tsp Dried Oregano 1 x Sainsbury's Oregano 12g
  • 10g Basil, torn or chopped 1 x Sainsbury's Fresh Packed Basil 30g
  • 30g Grated Parmesan, to garnish 1 x Stamford Street Co. Italian Hard Cheese 200g
  • 60g Pitted Green Olives 1 x Sainsbury's Pitted Green Olives 340g (150g*)
  • 200g Penne, dried 1 x Sainsbury's Penne Rigate Pasta 500g
  • 1 tsp Chilli (Hot Pepper) Flakes 1 x Sainsbury's Crushed Chillies 32g
  • 4 Sausages, fresh Italian fennel sausages are best, but any will do 1 x Sainsbury's British Pork Sausages, Taste the Difference x6 400g
