This easy sausage traybake is packed with artichokes, new potatoes, tomatoes and fresh pesto. It's delicious served with crusty bread as a fibre-rich, hearty dinner. Also great with salmon or chicken.
Method
Based on 4 servings, adjust as needed.
Step 1
Heat the oven to 200C/180C fan/gas 4. Toss the red onion, new potatoes, artichokes, tomatoes, sausages, fennel seeds and lemon wedges together in a baking tray or 20 x 20cm baking dish. Drizzle over the oil and season to taste. Roast for 20 mins.
Step 2
Remove the tray from the oven, add the beans and about half of their bean stock. Roast for 35 mins more.
Step 3
Add the baguettes to the oven for the final 12 minutes, if serving. After the sausage traybake has had 35 minutes, remove from the oven, swirl through the pesto and serve with warm, crusty bread, if you like.
