These chewy fruit and nut bars are packed with wholesome seeds, nuts and naturally sweet dried fruit for a satisfying energy boost. Easy to prepare and perfect for meal prep, they're a delicious grab-and-go snack for busy days or a post-workout pick-me-up.
Method
Based on 12 servings, adjust as needed.
Step 1
Preheat the oven to 180°C (350°F) and line a square 20 cm (8 inch) baking tin with baking paper.
Step 2
Spread the GF oats (or quinoa flakes), almonds and coconut evenly on a baking tray and bake for 8–10 minutes, or until lightly golden.
Step 3
Warm the honey and coconut oil in a small saucepan over medium–low heat until combined.
Step 4
Blitz the toasted ingredients in a food processor with half of the cranberries and the apricots, pepitas and sunflower seeds until everything is finely chopped. Add the honey mixture and blitz again to combine.
Step 5
Press the mixture into the prepared tin, pressing down firmly. Scatter over the remaining cranberries, pistachios, and chia seeds, then gently press these into the mixture.
Step 6
Cover with plastic wrap and refrigerate for 1 hour before slicing into 12. These will keep in an airtight container for up to 5 days.
