This quick and healthy coronation chicken salad is the perfect solution for a last-minute packed lunch. By using precooked chicken and a simple, flavorful dressing, you can have a filling, tasty meal ready in just five minutes. Load it into your favourite base, whether it's jacket potatoes, wraps, sandwiches or served with a salad.

Method

Based on 4 servings, adjust as needed.

Step 1

Mix the mayonnaise, curry powder, cinnamon, mango chutney, sultanas or chopped apricots, and then season with black pepper.

Step 2

Add the shredded chicken and stir to coat in the sauce. Stir in 2 tbsp water to loosen if needed, then season and serve as desired with the flaked almonds and pickled cornader on top.
