Butter Bean Puttanesca

We often talk about our Queen Butter beans as “nature's gnocchi”. Their creaminess creates the ultimate satisfaction without the added sluggishness you can often feel after a weighty bowl of pasta, and if you are using jars, you don’t even need to cook them beforehand. This is a weeknight staple, whipped up in ten minutes and can travel easily into work the next day for a delicious lunch that will really hit the spot."

Method

Based on 4 servings, adjust as needed.

Step 1

Heat the olive oil in a frying pan over a medium–high heat. Add the anchovy fillets, whole, and let them sizzle and reduce for about 2 minutes. Once they have cooked down and shrunk slightly, add the onion. You may need to add another tablespoon of olive oil at this point to ensure the onion gets well coated. Continue to stir until the onion has caramelised and is becoming translucent. Add the garlic, olives, chilli and capers, and continue to stir for 2 minutes.

Step 2

Next, add the chopped tomatoes and the sugar or honey. Stir and simmer, still over a medium–high heat, for 3–5 minutes.

Step 3

Next, add the beans to the pan, along with their bean stock. Stir into the sauce and continue to simmer for another 5 or so minutes until the sauce thickens. Stir in most of the parsley.

Step 4

Serve into bowls, top with the remaining parsley and a generous drizzle of olive oil.

  • 2 Bunch Parsley, roughly chopped 2 x Sainsbury's Fresh Packed Flat Leaf Parsley 30g
  • maldon Salt, to taste 1 x Maldon Sea Salt Flakes 250g
  • 2 Red Onion, finely sliced 2 x Sainsbury's Red Onions Loose
  • 140g Kalamata Olives 2 x Sainsbury's Pitted Kalamata Olives with Herbs 70g
  • 4 tbsp Extra Virgin Olive Oil, plus extra to serve 1 x Sainsbury's Olive Oil, Extra Virgin 500ml
  • 4 Ciabatta 4 x Sainsbury's Mini Ciabatta Roll
  • 2 Jar of Bold Bean Co Queen Butter Beans, with their bean stock 2 x Bold Bean Co Queen Butter Beans 570g
  • 100g Capers, drained 1 x Sainsbury's Inspired to Cook Capucine Capers 198g (125g*)
  • 2 tsp Chilli Flakes 1 x Sainsbury's Crushed Chillies 32g
