There’s something about buffalo sauce that just speaks to my soul. These buffalo ranch quesadillas are messy, cheesy, spicy little pockets of joy that never last long in our house. My daughter Lottie tries to act like they’re ‘too spicy’, but somehow still manages to finish the whole plate. Honestly, these are dangerously moreish; don’t say I didn’t warn you.
Method
Based on 4 servings, adjust as needed.
Step 1
Spray the pan lightly with oil and place over a medium heat. Add the sliced chicken and season with salt and black pepper. Cook for 4–5 minutes, until golden and cooked through.
Step 2
Add the red onion and cook for 2–3 minutes, to soften. Stir in the garlic purée and buffalo sauce, then reduce the heat and cook for another 2 minutes until everything is hot and coated.
Step 3
Turn off the heat and stir in the cream cheese, ranch dressing and spring onions. Mix well, then remove from the pan and set aside for now.
Step 4
Wipe out the pan and return it to a medium heat. Place a tortilla wrap in the pan, spoon a quarter of the chicken mixture on to one half, sprinkle with cheese, then fold the other half over.
Step 5
Cook for 2–3 minutes each side, until golden and crispy. Repeat with the remaining wraps. Slice into wedges and serve hot.
