Set yourself up for the day with this healthy veggie breakfast with eggs, avocado and black beans. It takes just 15 minutes to throw together, and it makes a great lunch, a quick dinner, or a brilliant show-off brunch.
Method
Based on 2 servings, adjust as needed.
Step 1
Heat the oil in a large non-stick frying pan. Add the garlic and cook for 30 seconds. Add the halved tomatoes, cumin and smoked paprika along woth a generous pinch of salt and cook until the tomaotes start to soften and blister. About 4-5 minutes. Tip in the black beans, stir well and add a splash of water to loosen the mixture.
Step 2
Make a well in the bean mixture and crack in your eggs. Turn the heat to medium and allow the eggs to cook until the whites are set and the yolk is still runny. Season the yolk with salt and paprika if you like.
Step 3
Remove the pan from the heat and scatter over the avocado and coriander. Squeeze over half of the lime wedges. Serve with the remaining wedges on the side and soured cream, if you like.
