Brothy Beans and Spring Greens

Bright, fresh and as green as it gets. These brothy beans are packed with goodness to keep you fulled throughout the day.

Method

Based on 2 servings, adjust as needed.

Step 1

Start by frying your onion in a little olive oil for 5-6 minutes on a medium heat. (if you don't have wild garlic, add your sliced garlic here).

Step 2

Add the entire jar of beans (if cooking for 2) with all of their liquid, then fill the jar with water and add this to the pan too (this is like recycling stock!)

Step 3

Once boiling, add your green veggies and wild garlic (if using) and parmesan, followed by the lemon zest and juice. Stir to combine and simmer for 3-4 minutes. Season to taste.

Step 4

Serve with a drizzle of good quality olive oil and dollops of pesto.

  • 2 tbsp Olive Oil 1 x Sainsbury's Olive Oil, Extra Virgin 500ml
  • 1 Onion, or Leek, roughly chopped 1 x Sainsbury's Onions Loose
  • 1 Bunch Asparagus, if not in season, use green beans or courgettes 1 x Sainsbury's Asparagus Spears
  • 1 Garlic cloves, finely sliced (or use wild garlic, if in season) 1 x Sainsbury's Garlic
  • 100g Peas, or frozen peas 1 x Sainsbury's Petits Pois 910g
  • 1 Jar Queen Butter Beans, with all of their liquid 1 x Bold Bean Co Queen Butter Beans 570g
  • 2 Handfuls Spinach 1 x Sainsbury's Baby Leaf Spinach 120g
  • 1 Lemon, zest and juice 1 x Sainsbury's Lemons
  • 2 Dollops Pesto 1 x Sainsbury's Basil Pesto, Taste the Difference 150g
  • 25g Parmesan, grated (or vegan alternative) 1 x Sainsbury's Parmigiano Reggiano Cheese 200g
