Loaded burrito bowls are a forever favourite of mine. They’re fast, healthy, fresh and seriously tasty. Plus, this recipe gives you the added thrill of being able to eat the bowl! This is a really fun one for kids and adults alike - it’s a wonderful quick and easy fakeaway that’s also perfect for busy weeknights. I love to break chunks off the shell and use them to scoop up the salad, a bit like nachos.
Method
Based on 4 servings, adjust as needed.
Step 1
Heat your oven to 180°C fan. There are a couple of ways you can make your tortilla bowls, depending on your equipment. You can use a small oven-proof saucepan or an oven-proof bowl or you can drape the tortilla over an upside-down, empty large glass jar. Press the tortilla into the pot or bowl to create a bowl shape, or press it down over the bottom of your upside-down jar. Bake for 12 minutes, until crispy all over. Remove carefully from the oven.
Step 2
While they’re cooking, prepare your filling. Finely dice your tomatoes and shred your lettuce, then set them aside as you cook the beef.
Step 3
Set a frying pan over medium heat, then add the olive oil, crushed garlic cloves, ground cumin, smoked paprika, chilli flakes and a large pinch of salt. Cook, stirring, for 2 minutes until they’re smelling lovely and fragrant.
Step 4
Add the beef mince and break it up with your spatula, stirring it through the spices and garlic. Cook until browned nicely, about 7 minutes, then add tomato paste and stir through the mince. Add your drained black beans, stir through the beef and cook for another 3 minutes. Taste, and season with a little more salt if you like.
Step 5
Divide the shredded lettuce between your crispy tortilla bowls, then pile on the beef and beans. Top with the diced tomatoes, and a dollop of yoghurt and serve with a wedge of lime and a scattering of chopped coriander, if you like.
