Jackfruit is a brilliant plant-based swap for pulled pork, and in this recipe, it soaks up all the sweet, smoky BBQ flavour. Wrapped up with crunchy slaw and sharp pickles, it’s messy, delicious and one of those vegan recipes everyone ends up loving.
Method
Based on 2 servings, adjust as needed.
Step 1
Mix the shredded jackfruit with the oil, paprika, garlic powder, onion granules,
salt and black pepper.
Step 2
Then place directly into the bottom of the large glass dish of the portable
air fryer, without the tray.
Step 3
Cook on the Roast setting for 12 minutes, stirring halfway through the
cooking time.
Step 4
Meanwhile, mix all the slaw ingredients together in a bowl and season with
salt and pepper. Stir the BBQ sauce into the jackfruit, then roast for a further
3–4 minutes until edges caramelise.
Step 5
Warm the tortillas in your microwave or air fryer for 30 seconds. Now it’s time
to build your wrap! Add the BBQ jackfruit, slaw and pickles. Wrap tightly, slice
in half and enjoy. Lovely!
