This quick and easy Mexican recipe is full of flavour. Our pinto beans are cooked in garlic and cumin, and make the perfect filling for these crispy taquitos.
Method
Based on 2 servings, adjust as needed.
Step 1
Preheat the air fryer to 200C. You can also cook this in an oven for double the time if you don't have an air fryer.
Step 2
Spoon the Capsicana Refried Pinto Beans into the centre of each tortilla wrap in a neat line. Top the bean mixture generously with grated cheddar cheese then roll into a thin cigar shape, tucking the contents tightly into the wrap as you go. Brush lightly with cooking oil and cook in the air fryer basket for 10-12 minutes or until crispy and piping hot inside. If cooking in the oven, place the rolled taquitos onto a lined baking tray, spacing them out nicely so they can cook evenly and are not overcrowded. Pop into the oven until crispy and golden.
Step 3
Meanwhile, dice the tomatoes and slice the spring onions. Mix gently and season with salt and lime juice. Once the taquitos are hot and crispy, serve with the tomato salad on top, along wth a drizzle of sour cream and a crumbling of feta cheese. Dip into the easy go Capsicana salsa as you go.
