Super Green Spaghetti

πŸ‘‹ You will need a liquidiser, NutriBullet or equivalent blender to make the sauce in this recipe. The perfect take on a vegan pesto. Creamy, hearty and packed to the brim with healthy fats, omega-3 and plenty of iron, making it the perfect way to enjoy the comfort of eating pasta. We have used wholewheat pasta for extra fibre, but feel free to use any pasta you have or prefer.

Method

Based on 4 servings, adjust as needed.

Step 1

Place a large pan of water onto a high heat and add a generous pinch of salt. Once rapidly boiling, add the baby spinach and basil leaves. Cook for 10-20 seconds until just wilted and remove from the water using a slotted spoon. Squeeze out the excess water. Into the same pan of boiling water add the spaghetti and cook for 11 minutes until al dente.

Step 2

While the pasta is cooking, make the green sauce. Into a liquidiser, NutriBullet or equivalent add the avocado, cooked baby spinach, cooked basil, grated garlic, juice and zest of lemon, and cashew nuts. If you have parmesan or vegan hard cheese, add this as well, but it's a nice to have, not a must have. Blend, along with the extra virgin olive oil. Scoop out a ladle of hot pasta water while the pasta is cooking and add this as well. Blend until smooth. Season with salt and pepper.

Step 3

Drain the pasta once cooked, but hold back about 100mls of the cooking water (if cooking for 4). Place back into the pan and spoon in the super green sauce. Mix well and season with a little more black pepper and grated vegan cheese or parmesan if you wish.

  • 500g Wholewheat Spaghetti Pasta 1x Sainsbury's Spaghetti Wholewheat Pasta 500g
  • 100g Baby Spinach, washed 1x Sainsbury's Baby Leaf Spinach 100g
  • 50g Cashew Nuts 1x Sainsbury's Fairtrade Cashew Nuts 100g
  • 60 mls Extra Virgin Olive Oil 1x Sainsbury's Olive Oil, Extra Virgin, SO Organic 500ml
  • Maldon Salt to taste 1x Maldon Sea Salt Flakes 250g
