Savoury Festive Bakes

All the goodness of a Christmas dinner cocooned in flaky, butter pastry and baked to perfect. Serve for brunch, lunch or dinner or get all fancy and make minis versions for a cocktailparty special.

Method

Based on 6 servings, adjust as needed.

Step 1

Make up the stuffing mix according to the packet instructions and leave it to cool by spreading it on a flat plate (this will help it cool down quicker if you are short on time). Remove the sausages from their skins and place the meat into a small bowl. Use the back of a fork to mash up the sausage meat.

Step 2

Lay out the ready-rolled pastry in front of you, leaving it on it's paper. Cut each roll of pastry into 6 even rectangles (leaving you with a total of 12 rectangles. 6 bottoms and 6 tops). Cut 6 squares of grease-proof paper, slightly larger than the pastry rectangles. Pop the bases onto each square before transferring them to a large, flat tray.

Step 3

Onto the pastry bottoms, add equal amounts of the cooled stuffing and spread it out using the back of a spoon, leaving a 1cm border all the way around each one. Next add 1 tsp cranberry sauce to each pasty, followed by equal amounts of sausage meat, which you will need to press down slightly with the back of a spoon or fork. Top each one off with 4-5 spinach leaves .

Step 4

Sparingly brush the edges with a little beaten egg before topping each bottom with the remaining 6 pieces of pastry. Use a fork to seal the pasty edges all the way around and brush each one with the remaining egg wash. Sprinkle with flaked sea salt if you have some. Pop them into the fridge to chill while you preheat the oven. These can also be made a day in advance or frozen at this stage ready to bake from frozen.

Step 5

Preheat the oven to 190°Cfan/210°Cfan. When ready to cook, place the tray into the hot oven and bake for 20-25 minutes until golden. Remove from the oven and allow to cool slightly before serving.

  • 2 rolls Ready Rolled Puff Pastry 2x Jus-Rol Puff Pastry Ready Rolled Sheet 320g
  • 4 Sausages 1x Sainsbury's Butcher's choice Cumberland British Pork Sausage x8 454g
  • 1 Egg, whisked 1x Sainsbury's British Free Range Eggs Medium x6
  • 2 handfuls Spinach 1x Sainsbury's Baby Leaf Spinach 100g
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
