Whipped Cottage Cheese with Figs on Toasted Sourdough

The viral trend that keeps on giving. Try this protein boosting whipped cottage cheese as a sweet or savoury snack this lunchtime. We love it with hot honeyed figs and a pinch of salt and chilli flakes, but it also makes a great savoury dip when blended with extra virgin olive oil, garlic and lemon juice.

Method

Based on 2 servings, adjust as needed.

Step 1

Place the cottage cheese in a food processor and blend for about 30 seconds. Stop and scrape down the sides of the bowl with a spatula. Blend again until completely smooth. Spread on toast with jam or a drizzle of honey or spread on crostini. You can also put the whipped cottage cheese in a bowl and top with fresh fruit or a simple cucumber tomato salad. It makes a great dip, serve with cut up veggies, pita, or crackers.

  • 2 Figs, or pears, roasted, panfried or simply sliced 1 x Sainsbury's Figs 140g
  • 1 pinch Chilli Flakes 1 x Sainsbury's Crushed Chillies 32g
  • 300g Cottage Cheese 1 x Sainsbury's Cottage Cheese 300g
  • 2 tsp Honey 1 x Sainsbury's Runny Honey 340g
