Tuck into this delicious pan of goodness. Perfect for those trying to eat a little less meat and up the fibre. This is a great dish to really pack in the veggies. Add just about anything you need to use up from the bottom of the fridge veg drawer. Green beans to peppers, spring onions to spinach.
Method
Based on 4 servings, adjust as needed.
Step 1
Heat the oil in a large pan set over a high heat and fry the onion, celery and pepper, stirring occasionally, for 5 mins until starting to soften and colour.
Step 2
Stir in the spices and rice, then tip in the tomatoes and the butter beans, plus their stock and 500 ml of water (if cooking for 4) . Stir in the garlic and bouillon powder. Bring to a simmer, then semi-cover and cook for 35 mins until the rice is tender and has absorbed most of the liquid. Keep an eye on the pan towards the end of the cooking time to make sure it doesn’t boil dry and that the rice isn't sticking to the bottom. If so, give it a stir, turn down the heat and add a little more water if necessary. Stir in the parsley and serve hot with some hot sauce on the side, if you like.
