A fragrant and leathery dinner that's quick to throw together and very easy to customise depending on your requirements. We love to swap the turkey of tempeh for a meat-free meal occasionally. The lemongrass and the pickled cucumbers are the real stars of the show.
Method
Based on 4 servings, adjust as needed.
Step 1
Combine the sliced cucumber, rice wine vinegar, sugar and a pinch of salt in a small non-reactive bowl and set aside.
Step 2
Heat the flavourless oil in a deep frying pan over a medium heat and fry the garlic, shallots, lemongrass, chilli for 2-3 minutes. Turn up the hat tp high and ad the turkey mince. Fry for a further 8-10 mins, stirring frequently until it's browned all over, fragrant and sizzling. Stir through the dark soy, fish sauce, sesame oil and another pinch of sugar. Stir until the mince is well coated, cooked through and slightly caramelised, then season with lime juice (to taste). You may also want to balance the flavours by adding a little more soy sauce and fish sauce to taste.
Step 3
Heat the sticky rice according to the packet instructions. Spoon the sticky rice into bowls and spoon over the turkey larb. Top with the pink pickled onions, pickled cucumbers from step 1, the sliced lettuce, then scatter over the mint leaves. We like to serve with extra lime wedges on the side.
