Turkey and Pesto Croissants

Use up leftover Christmas turkey in these savoury croissants. Customise with other ingredients you have in the fridge for a great brunch or lunch option

Method

Based on 2 servings, adjust as needed.

Step 1

If you prefer your croissants to be warm, heat the oven to 180C/160C fan/gas 4 and warm for 4-5 mins (or, heat them in the microwave in 10-second bursts).

Step 2

Meanwhile, put the turkey, pesto,and a few grinds of black pepper in a small bowl, and mix well. Slice the croissants in half lengthways. Spoon half the turkey pesto mixture into each croissant and layer any optional extras over the top (we used cooked bacon, cheddar, spinach), then close and serve.

  • 100g Leftover Roast Turkey, shredded 1 x Deli Express British Roast Cooked Turkey Slices x4 150g
  • 1.5tbsp Pesto 1 x Sainsbury's Green Pesto 190g
  • 4 rashers Cooked Bacon 1 x Sainsbury's British Smoked Cooked Crispy Bacon rashers 50g
  • 2 Croissants 1 x Sainsbury's Butter Croissants, Taste the Difference x4
  • 30g Mature Cheddar, grated 1 x Sainsbury's British Mature Grated Cheddar Cheese 250g
  • 1 handful Spinach 1 x Sainsbury's Baby Leaf Spinach 120g
