Tuna and White Bean Sweet Potato

Here the classic Mediterranean salad combination of tuna and white beans is given a twist. Served in baked sweet potatoes, the acidity of the tuna and bean salad perfectly marries the starchy sweetness of the potato.

Method

Based on 2 servings, adjust as needed.

Step 1

Preheat the air fryer to 180°C (350°F).

Step 2

Prick the sweet potato skins, place them in the air fryer and cook for 30–35 minutes, or until they just give when a fork is inserted.

Step 3

Meanwhile, in a bowl, mix together the mayo, drained tuna, drained beans, red onion, lime juice and chilli with a little salt and pepper

Step 4

Once the potatoes are cooked, leave to cool a little, then slice open and fill with the tuna mixture. Top with finely diced cucumber and serve with some rocket leaves, if you like.

  • 0.5 Small Lime, juice of 1 x Sainsbury's Limes x1
  • 0.25 Cucumber, finely diced 1 x Sainsbury's Small Whole Cucumber
  • 30g Rocket Leaves, to serve 1 x Sainsbury's Wild Rocket 60g
  • Ground Black Pepper, to taste 1 x Sainsbury's Black Peppercorn Grinder 50g
  • 2tbsp UPF free Mayonnaise, or use soured cream 1 x Stokes Real Mayonnaise 345g
  • 145g Canned Tuna In Oil, drained 1 x Sainsbury's Tuna Chunks in Olive Oil 145g
  • 0.5 Red Onion, finely diced 1 x Sainsbury's Red Onions Loose
  • 0.5 Red Chilli, deseeded and finely chopped 1 x Sainsbury's Red Chillies 65g
  • Malson Salt, to taste 1 x Maldon Sea Salt Flakes 250g
  • 2 Sweet Potatoes, medium 2 x Sainsbury's Sweet Potatoes Loose
