I like to think of these lovely little sticky beef lettuce cups as ‘lettuce tacos’ - juicy, gochujang spiced beef, crunchy veggie toppings, a drizzle of spicy aioli and a soft, crunchy lettuce leaf containing it all make them the perfect bite of deliciousness. The trick here is in the bold flavours and the contrasting textures. Something juicy, something crunchy, something creamy and something fresh makes for a wonderful combination. Plus, they take less than 30 minutes and are easy to adapt, based on what you have to hand.
Method
Based on 4 servings, adjust as needed.
Step 1
Add the soy sauce, gochujang paste, honey, sweet chilli sauce, rice vinegar and a good grind of black pepper to a bowl, then mix well, then set aside. Mix the aioli with another spoonful of gochujang paste, then set aside.
Step 2
Set a frying pan over medium-high heat, then add the sesame oil. Add the beef mince and break it up with a wooden spoon, then cook until starting to brown, then add the crushed garlic cloves. Stir through the beef.
Step 3
Once the beef is browned, pour in the sauce and stir it through the beef, until it’s well coated. Cook, stirring for another 3 minutes, until the sauce thickens and bubbles up nicely. Taste, and add a little more salt or honey if you think it needs it.
Step 4
Lay out the lettuce cups on a plate, then top with a few heaped tablespoons of the beef. Scatter over a little of the diced cucumber, red pepper and spring onions, then top with the chopped coriander, roasted peanuts and a drizzle of spicy mayo.
