These lime and garlic meatballs are comfort food at its finest, requiring minimal effort. Straightforward to throw together and add a touch of something exotic to a mid-week email. We could eat this dish on repeat!
Method
Based on 4 servings, adjust as needed.
Step 1
Soak the dried breadcrumbs in a little water or milk to soften them slightly.
Step 2
Place the beef mince, lime zest** (from half the limes), minced garlic*, a little **salt, ground black pepper, egg, and the soaked **breadcrumbs* in a large bowl and mix with your hands or a fork until the mixture is combined.
Step 3
Form the mince mixture into meatballs. Wet your hands slightly to prevent the meat from sticking to your hands and form meatballs the size of a golf ball.
Step 4
Get yourself a large saucepan and place a small bowl upside down in the pot and surround it with boiling water until it’s 1/2 inch from being submerged.
Step 5
In a flat-bottomed bowl (that can fit in your saucepan), add in the coconut milk, green thai curry paste, edamame beans, sugar, and light soy sauce. Combine well so that the sauce is mixed. Top with your meatballs.
Step 6
Gently place your meatball bowl on top of the upside down bowl in the saucepan and add on your lid. Steam on medium-low heat for 15-20 mins.
Step 7
Meanwhile, heat your jasmine rice according to packet instructions. After your meatballs and rice are cooked, divide the components between two bowls. Top with a squeeze of lime, fresh coriander, and enjoy!
