Your favourite Japanese curry in burger form: this indulgent treat is a relaxed spin on traditional flavours, with a katsu curry mayonnaise to top the panko-coated chicken patty.
Method
Based on 2 servings, adjust as needed.
Step 1
Preheat the air fryer to 180°C. Once hot, lay the breaded chicken in the basket and cook for 12-15 minutes or according to the packet instructions. Once cooked, pop to one side and leave the rest.
Step 2
To make the katsu mayo - combine the mayo, lime juice, honey, ketchup, soy sauce, worcestershire sauce, curry powder, sesame seed oil and hot mustard until smooth.
Step 3
Split and toast the buns (toast in the air fryer, cut side up for 2 minutes if you wish), then spread with the mayo. Add a layer of lettuce, spring onions and radishes, then top with the chicken and more mayo. Serve with more mayo on the side.
