Spanish-Style 'Veggie Paella'

This cheat's paella couldn't be easier. We've used Merchant Gourmet Spanish-Style Grains to save time and add flavour.

Method

Based on 4 servings, adjust as needed.

Step 1

In a large saucepan on a medium heat add a glug of oil along with the diced onion. Sauté for a few minutes until it starts to become translucent.

Step 2

Next, add the sliced peppers, courgettes and peas along with the paprika and some salt. Stir frequently and after 5 minutes add the Spanish Style Grains, vegetable stock and lemon juice to taste.

Step 3

Leave to simmer, stirring frequently, for a further 10 minutes before serving. Garnish with fresh parsley and the remaining lemon wedges.

  • 200ml Vegetable Stock 1 x Knorr Stock Pot Vegetable 4x28g
  • 0.5tsp Salt 1 x Maldon Sea Salt Flakes 250g
  • 1tsp Paprika 1 x Sainsbury's Paprika 44g
  • 2 pouches Merchant Gourmet Spanish Style Grains 1 x Merchant Gourmet Smoky Spanish Rice & Grains 250g
  • 1 Red Pepper, sliced 1 x Sainsbury's Red Pepper
  • 2 Courgette, sliced 2 x Sainsbury's Courgettes Loose
  • 1 Green Pepper, sliced 1 x Sainsbury's Green Pepper
  • 150g Peas 1 x Sainsbury's Garden Peas 910g
  • 15g Fresh Parsley, chopped 1 x Sainsbury's Fresh Packed Flat Leaf Parsley 30g
