Roasted Aubergine Salad

Create our roasted aubergine salad with lots of different colours and textures, then serve it on a platter to deliver big impact for small effort. Lovely with grilled fish, chicken or lamb chops.

Method

Based on 4 servings, adjust as needed.

Step 1

Heat the oven to 200C/180C fan/gas 6. Scatter the aubergines, peppers, onion wedges and garlic cloves into a large roasting tin, season with salt and pepper, then drizzle over most of the olive oil. Mix well using your hands to ensure everything is coated in the oil. Put in the oven for 30 mins, then remove and tip in the cherry tomatoes and chickpeas. Mix to combine and put back in the oven for 20 mins until everything is roasted. Remove from the oven and set aside to cool.

Step 2

Meanwhile, make the dressing by combining the pomegranate molasses with the lemon juice, honey, capers, remaining oil and a good pinch of salt and pepper. Tip the cooled aubergine mix into a serving bowl with the rocket and dressing, then gently toss to combine everything. Scatter over the sunflower or pumpkin seeds and drizzle over a little more pomegranate molasses.

  • 6 tbsp Olive Oil 1 x Sainsbury's Olive Oil, Extra Virgin 1L
  • 3 tbsp Pomegranate Molasses 1 x Odysea Pomegranate Molasses 250ml
  • 1 Lemon, juiced 1 x Sainsbury's Lemons
  • 2 tbsp Capers, drained 1 x Sainsbury's Inspired to Cook Capucine Capers 198g (125g*)
  • 1 tsp Honey 1 x Sainsbury's Runny Honey 340g
  • 60g Rocket Leaves 1 x Little Leaves Wild Rocket 60g
  • 4 tbsp Sunflower Seeds, or pumpkin seeds 1 x Crazy Jack Organic Pumpkin Seeds 100g
  • 2 Aubergines, chopped into 3cm peices 2 x Sainsbury's Aubergine
  • 400g Chickpeas, drained and rinsed 1 x Sainsbury's Chickpeas in Water 400g (240g*)
  • 200g Cherry Tomatoes 1 x Sainsbury's Vittoria Cherry Vine Tomatoes, Taste the Difference 250g
  • 6 Garlic Cloves, skin left on 1 x Sainsbury's Large Garlic
