Quick Prawn Pad Thai

Pad Thai is a light and fragrant noodle dish with tamarind, garlic, peanuts and shallots. This quick and easy recipe uses a Blue Dragon meal kit, which contains individual sachets of Pad Thai paste, rice noodles and crushed peanuts. Only three quick, easy steps are needed to create this mild street-food classic. The secret to great Thai dishes is the freshness and balance of Thai ingredients that are ground into paste.

Method

Based on 4 servings, adjust as needed.

Step 1

Remove the rice noodles from both Blue Dragon Pad Thai Noodle Kits and add them to a pan of boiling water. Cook for 5 minutes, then drain and rinse immediately under cold running water to prevent sticking. Set aside.

Step 2

Heat a tablespoon of oil in a wok or large frying pan over high heat. Stir-fry the prawns for 2 minutes until they are pink and opaque. Remove the prawns from the pan and set them aside—this ensures they stay juicy and don't overcook

Step 3

In the same pan, crack in the two eggs. Stir quickly for about 1 minute until they are lightly scrambled and just set. Add the prawns back into the wok.

Step 4

Add the cooked noodles and the pouches of pad thai sauce from the Blue Dragon Pad Thai Meal Kits to the wok, stir-frying for 2 minutes until everything is piping hot. Add the spring onions, and beansprouts. Stir through most of the peanut sachets from the kits, then serve with a final sprinkle of the remaining peanuts.
