Quick Moroccan Turkey Couscous

Lunchtime sorted! A fresh and speedy couscous, topped with pomegranate seeds and roasted turkey slices. An ideal lunch dish that is thrown together in a matter of minutes and packed with fibre.

Method

Based on 2 servings, adjust as needed.

Step 1

Roughly tear the turkey slices and put in a large bowl with the salad leaves ** and **couscous. Add a drizzle of olive oil and toss well. Divide between plates, then sprinkle each with the pomegranate seeds and flaked almonds. Grind over **pepper* and add a squeeze of lemon juice before serving.

  • 0.5 Lemon, juice, to taste 1 x Sainsbury's Lemons
  • 120g Roast Turkey Slices, torn 1 x Deli Express British Roast Cooked Turkey Slices x4 150g
  • 2 tbsp Flaked Amlonds, or any seeds 1 x Sainsbury's Flaked Almonds, SO Organic 100g
  • 200g Fresh Moroccan Couscous 1 x Sainsbury's Moroccan Cous Cous, Taste the Difference 200g
  • 90g Green Salad Leaves 1 x Sainsbury's Baby Leaf Salad 90g
