Prosciutto, Kale and Butter Bean Stew

Whip up this healthy stew in just 25 minutes with prosciutto, kale and butter beans. It's a low-calorie, low-fat dinner with three of your 5-a-day.

Method

Based on 4 servings, adjust as needed.

Step 1

Fry the prosciutto in a dry saucepan over a high heat until crisp, then remove half with a slotted spoon and set aside. Turn the heat down to low, pour in the oil and tip in the fennel with a pinch of salt. Cook for 5 mins until softened, then throw in the garlic, chilli flakes and thyme and cook for a further 2 mins, then pour in the wine or stock and bring to a simmer.

Step 2

Tip both cans of butter beans into the stew, along with their liquid, then add the tinned tomatoes, season well and taste, it may need a pinch of sugar. Bring everything to a simmer. Cook, undisturbed, for 5 mins, then stir through the kale. Once wilted, ladle the stew into bowls, removing the thyme sprigs and topping each portion with the remaining prosciutto.

  • 1 Fennel Bulb, thinly sliced, woody core removed 1 x Sainsbury's Fennel Loose
  • 180ml White Wine, approx, or chicken stock 1 x Sainsbury's House Sauvignon Blanc White Wine (Small bottle) 18.7cl
  • 2 tins Butter Beans, including their juice 2 x Sainsbury's Butter Beans In Water 400g (235g*)
  • 2tbsp Olive Oil 1 x Sainsbury's Olive Oil 500ml
  • 1tsp Chilli Flakes 1 x Sainsbury's Chipotle Chilli Flakes 45g
  • 80g Prosciutto, torn into pieces 1 x Sainsbury's Italian Prosciutto Crudo x9 120g
  • 2 Tinned Cherry Tomatoes 2 x Sainsbury's Italian Pomodorini Cherry Tomatoes in rich tomato juice, Taste the Difference 400g
  • 200g Kale, sliced 1 x Sainsbury's Kale 200g
