A simple and tasty low-fat mid-week meal that can be prepared in advance. Cook the pork in an air fryer if you have one to save on time and the washing up.
Method
Based on 2 servings, adjust as needed.
Step 1
Start by cutting the pork tenderloin into 5cm pieces.. Mix the grated garlic with a dash of **olive oil, the lemon zest and half of the lemon juice. Season with lots of black pepper, salt and half of the dried oregano. Tip in the pork and mix so the meat is well coated. Set aside to marinate for 30 mins if you have time.
Step 2
Heat a little more olive oil in a non-stick pan. Add the chopped onion along with a pinch of salt, cover and cook for 5 mins, then remove the lid and stir in the rice, dried mint and bouillon. Pour in three times the amount of boiling water, cover and cook for 30-35 mins until the liquid has been absorbed and the rice is tender. Stir in the dill and a squeeze of lemon juice.
Step 3
Meanwhile, preheat the air fryer to 190°C. Thread the pork onto two skewers before placing into the air fryer baskets and cooking for 12-13 minutes, turning halfway through cooking (you don't have to use skewers if you don't have time!) Add a squeeze of lemon juice once cooked and allow to rest.
Step 4
Mix the chopped tomatoes, diced cucumber, sliced red onion and black olives in a bowl with the remaining dried oregano, red wine vinegar, salt, pepper and a little more **olive oil
Step 5
Serve the now-cooked rice, along with the salad and the cooked pork Souvlaki. Crumble over the feta cheese before serving with a wedge of lemon.
