This has all the elements for an impressive candle-lit wine-lubricated date night. But somehow over text, ‘date’ translated as ‘budget’ and the whole thing accidentally became a one-pan situation. So here you go babe. Steak in a pan.
Method
Based on 2 servings, adjust as needed.
Step 1
Pan-fry the broccoli in the oil over medium–high heat for 5 minutes, until beginning to char on the edges. Set aside on a plate.
Step 2
Season the steak with salt and pepper before pan-frying in a hot, oiled pan for 4 minutes each side for medium–rare. Remove and rest for 4 minutes.
Step 3
Add the butter and mushroom to the same pan and hard fry for 4 minutes until golden. Season well with salt and pepper.
Step 4
Deglaze the pan with the wine for 1 minute, then reduce the heat to medium–low, add the cream and bring to a simmer.
Step 5
Slice the steak and return to the pan, along with the broccoli. Gently toss to coat in the sauce (you can let the steak simmer for a bit longer here if you prefer it a bit more done).
Step 6
Whisk straight to the table in the pan and face the impending questions relating to ‘personal’ and ‘business’ expenses. (Best answered with eyes that say, ‘well, this dinner was supposed to be personal, so ...’)
