Packed with protein, along with iron-rich spinach and vitamin C from pepper and tomato, this dish is a nutrient-dense powerhouse for your baby and everyone else at the table. It’s also an excellent way to boost everyone’s veggie intake at breakfast.
Method
Based on 4 servings, adjust as needed.
Step 1
Preheat the oven to 180°C (350°F).
Step 2
Place the onion, capsicum and garlic in a food processor and process until finely crushed or puréed, scraping down the side once or twice to help blend evenly.
Step 3
In a large ovenproof frying pan or skillet, heat the oil and cook the mixture for 3–5 minutes, or until softened.
Step 4
Add the spices, beans, passata and date paste or pear purée and simmer for 10 minutes.
Step 5
Stir in the spinach (if using) until wilted, then gently crack the eggs over the sauce. Do not stir.
Step 6
Transfer the pan to the oven. Bake for 10–15 minutes, or until cooked through.
It’s best to ensure the eggs are cooked through and offer strips of egg alongside mashed shakshuka sauce with toast soldiers for dipping.
