Little Gem, Griddled Courgette and Feta Shake Up Salad

A lovely little salad that makes a delicious lunch. We love to chargrill the courgettes ahead of time, so they can be taken out of the fridge as needed. Very little prep required.

Method

Based on 1 servings, adjust as needed.

Step 1

Heat a griddle pan until hot. Toss the courgette slices in a little olive oil and seasoning, then griddle for 2-4 mins on each side until charred and tender. Set aside to cool. Will keep chilled for 3 days.

Step 2

To make the dressing, whisk together the remainng olive oil (about 2tbsp per person), vinegar or lemon juice and honey, and season with a little salt and pepper. Put the dressing in a large reusable container, or large serving bowl. Add the griddled courgettes, feta, pine nuts or seeds and the lettuce wedges.

Step 3

When ready to serve, turn the container upside down or give it a good shake to coat everything in the dressing, or mix everything in the serving bowl to serve straightaway.

  • 2tsp White Wine Vinegar, or lemon juice 1 x Sainsbury's Wine Vinegar, White Wine 500ml
  • 0.5tsp Honey 1 x Sainsbury's Runny Honey 340g
  • 50g Feta, crumbled 1 x Sainsbury's Greek Feta Cheese 200g
  • 1tbsp Toasted Pine Nuts, or pumpkin seeds 1 x Sainsbury's Toasted Pumpkin & Sunflower Seeds 100g
  • 2tbsp Extra Virgin Olive Oil, plus extra for griddling 1 x Sainsbury's Olive Oil, Extra Virgin 250ml
  • 1 Little Gem Lettuce, cut into wedges then halved into chunks 1 x Sainsbury's Little Gem Lettuce x2
  • 1 small Courgette, sliced into rounds on the angle 1 x Sainsbury's Courgettes Loose
