Healthy Gnocchi

Rustle up our hearty and wholesome gnocchi dish in just 30 minutes. It's full of veggies, including spinach, white beans, tomatoes and red onion

Method

Based on 2 servings, adjust as needed.

Step 1

Heat the oil in a large saucepan over a medium-low heat and cook the onion with a pinch of salt for 8-10 mins until soft, but not coloured. Stir in the garlic and cook for 1 min until fragrant.

Step 2

Add the tomato purée, chilli flakes, dried oregano and the beans, along with their liquid, then pour in the tinned tomatoes. Bring to a simmer, season well with salt and pepper.

Step 3

Add the gnocchi along with the spinach, cover and cook for another 2-3 mins, then uncover and stir in the crème fraîche. Simmer for another 1 minute, until the gnocchi is cooked through. Serve in bowls sprinkled with the parmesan, fresh parsley, if using and a little black pepper to finish.

  • 400g Fresh Gnocchi 1 x Sainsbury's Fresh Gnocchi 500g
  • Maldon Salt, to taste 1 x Maldon Sea Salt Flakes 250g
  • 2 tbsp Reduced Fat Crème Fraîche 1 x Sainsbury's British Lighter Crème Fraîche 300ml
  • 25g Parmesan, finely grated 1 x Sainsbury's Parmigiano Reggiano Cheese 200g
  • 10g Parsley, to serve 1 x Sainsbury's Fresh Packed Flat Leaf Parsley 30g
  • 1 Red Onion, finely chopped 1 x Sainsbury's Red Onions Loose
  • 1 tsp Olive Oil 1 x Sainsbury's Olive Oil, Extra Virgin 1L
  • 2 Garlic Cloves, finely chopped 1 x Sainsbury's Garlic
  • 1 tbsp Tomato Purée 1 x Sainsbury's Tomato Puree, Double Concentrate 200g
  • 1 pinch Crushed Chilli Flakes 1 x Sainsbury's Crushed Chillies 32g
  • 100g Fresh Spinach, or frozen 1 x Sainsbury's Baby Leaf Spinach 120g
  • 1 tsp Dried Oregano 1 x Sainsbury's Oregano 12g
